Garlic Shrimp Scampi

Garlic Shrimp Scampi recipe – easy to make, and takes little time as nicely – extraordinary for the days when the time table is bursting with sports.   • 8 oz pasta, I used angel hair
  • 1 lbs pre-cooked shrimp deveined and peeled if needed
  • 2 tbsp butter
  • 2 cloves garlic minced
  • 1/4 cup lemon juice
  • 2 tbsp basil or parsley, chopped
  • 1/4 cup parmesan cheese
  • 1/4 cup extra virgin olive oil
  • salt/pepper, to taste


  1. Cook the pasta according to the box directions. Best to leave it al dente.
  2. In the meantime, melt the butter in medium/high heat. Add the shrimp and garlic, cook 1 minute. Season with salt and pepper. Add the lemon juice and finish cooking the shrimp until it's pink, which will take about 2 minutes.
  3. Once the pasta is cooked and drained, add it to a serving bowl. Stir in the olive oil, toss gently to coat {More olive oil may be needed}.
  4. Add the parmesan cheese.
  5. Pour the shrimp over the pasta and toss once more.
  6. Garnish with the basil or parsley and serve immediately.
