Chocolate Coke Poke Cake




Ingredients

Cake:
  1. 1 cup flour
  2. 1 cup sugar
  3. 1/4 tsp salt
  4. 1/2 tsp baking powder
  5. 1/2 cup butter (1 stick)
  6. 1/4 cup unsweetened cocoa powder
  7. 3/4 cup coca-cola
  8. 1 egg
  9. 1tsp vanilla
Frosting:
  1. 1/2 cup butter
  2. 1/4 cup unsweetened cocoa powder
  3. 1/2 cup coca cola
  4. 4 cups powdered sugar
  5. 1/2 cup mini chocolate chips for the topping

Instructions


Cake:
  1. Preheat oven to 350 F and grease an 8×8 inch pan.
  2. *I lined my pan with parchment paper so I could just lift the cake out. This make it easier to slice.
  3. Mix flour, sugar, salt, and baking powder in a large bowl and set aside.
  4. In a medium bowl, melt the butter int he microwave. Stir in the coca powder and coca-cola. Whisk it into the flour mixture. Add the egg and vanilla. Whisk until combined and lumps are gone.
  5. Pour into your prepared pan. Bake at 350 for about 30 minutes. Do not over bake.
  6. When cake is almost finished baking (about 5 minutes left), begin making the chocolate frosting.

Frosting:
  1. Stir butter, cocoa powder and cola into a sauce pan. Bring to boil. Remove from heat and slowly whisk in 4 cups of powdered sugar. Whisk until smooth.
  2. Once the cake is done, remove it from the oven and poke it all over with a fork or knife. Pour the warm glaze over the top of the hot cake. Then sprinkle with mini chocolate chips. Allow to cool for about an hour before slicing.


*Allowing the cooling time just let the frosting really soak into the cake, and it lets the frosting set so it doesn’t ooze everywhere when you slice it. To speed along the cooling process, place the cake int he fridge.
*This recipe makes 9 generous pieces. If you double the recipe it will serve 15-20 people.
